If you have prepared the dough for immediate use (6-8 hours) wait around 20 minutes before proceeding with the formation of the dough into balls; if instead you are preparing the dough for later use (24-48 hours) it is sufficient to wait until 5 minutes beforehand to form the dough balls. The weight of the dough balls depends on the size of the pizza that you wish to prepare, the balls can rest covered with a cloth on trays.
